In our implementation, meals are produced by qualified culinary partners to specifications we define and enforce. We take ownership of every subsequent step: receiving, inspection, temperature compliance, assembly, transportation, ramp operations, and galley loading.

We work with culinary partners to define exact meal specifications: portion size, ingredient sourcing, packaging format, temperature requirements at handoff, and compliance documentation standards. Our quality control begins with incoming inspection against those specifications.

Receiving and Inspection

Every incoming delivery from a culinary partner is inspected against specification: temperature at delivery, packaging integrity, labeling compliance, and quantity verification against flight-specific demand data from our proprietary platform, Scorpio. This external handoff generates a formal compliance record at the very start of the chill-chain, an inspection point that internal handoffs within integrated operations typically do not produce with the same documentation rigor.

The Complete Chill-Chain Sequence

Once food passes incoming inspection, we execute our five-stage, temperature-controlled sequence with documented compliance at every handoff.

Clean

Carts returned from aircraft are sanitized, waste is sorted, and international waste is handled under CBP and USDA protocols. Every cart is inspected, and cleared before re-entering the provisioning cycle.

Replenish

Scorpio translates airline demand data into flight-specific provisioning requirements. All items, food, airline-owned product, are staged to the exact specifications of each departure.

Assemble

Meals, trays, and service carts are assembled in a temperature-controlled environment to the precise galley configuration required for each aircraft type and service class. Temperature compliance is documented before any cart moves to transport.

Deliver

Assembled carts move to the aircraft under controlled conditions. Timing is synchronized with flight departure schedules through Scorpio.

Load

Our ramp operations team loads carts aboard the aircraft under documented safety protocols, including collision avoidance procedures where deployed.
