The split-catering model is an operational framework in which food production and logistics execution are performed by separate, specialized entities. In our implementation, meals are produced by qualified culinary partners to specifications we define and enforce. We take ownership of every subsequent step: receiving, inspection, temperature compliance, assembly, transportation, ramp operations, and galley loading.
The traditional model integrates production and logistics within one organization, splitting capital and management attention across two different operational disciplines. Since Air Fayre began operations, we have followed the split-catering model, directing technology investments toward logistics excellence.
