Our split-catering model concentrates every operational resource on logistics execution. Meals are produced by qualified culinary partners. Air Fayre manages every step that follows: receiving, temperature compliance, assembly, ramp delivery, and galley loading. The model is the structural foundation behind our technology investment, our compliance infrastructure, and our ability to serve commercial, cargo, and charter clients from the same operational platform.

Precision Logistics Across Commercial, Cargo, and Charter Aviation
Air Fayre delivers airline catering services from four U.S. locations: Los Angeles, Memphis, Indianapolis, and Portland. Our split-catering model separates food production from logistics execution, concentrating every resource on the half of the catering value chain that determines whether your aircraft departs on time.

Commercial In-Flight Catering
Precision meal provisioning and galley logistics for major domestic carriers across all service classes. Flight-by-flight demand management through our proprietary logistics platform, Scorpio, ensures provisioning quantities and galley configurations are accurate to each departure, not built from templates or daily averages.
High-volume departure schedules served complete and on time, with multi-class assembly, temperature-controlled environments, and documented compliance at every stage of the chill-chain.
Cargo Crew Meal Catering
Crew meal programs built for the operational tempo of cargo aviation. Provisioning timed to overnight sort windows, meal formats designed for long-haul cargo crew nutrition, and scheduling that flexes with freight volume rather than running on static templates.
Dedicated protocols for crew flight scheduling, variable volume provisioning, and irregular departure management. Built through sustained cargo operations at the FedEx SuperHub in Memphis, now serving international freight carriers at Indianapolis.
Charter and Specialty Catering
MLB and NFL team charters, university athletics, dignitary flights. Full travel parties of 80 to 120 people with meal requirements specified at the individual level, and provisioned on timelines measured in hours rather than days.
Compressed schedules, custom nutritional specifications, and VIP presentation standards are the standard operating conditions for our charter practice. Seven Southern California airports served from the Gardena facility give charter clients departure flexibility across the region.
Five Stages from Sanitized Cart to Aircraft Galley
Every departure runs through the same five-stage, temperature-controlled sequence from sanitized cart to aircraft galley.
Clean
Carts return from aircraft. Full sanitization, waste sorting, and international waste handling under FDA and CBP protocols.
Replenish
Our logistics platform translates airline demand data into flight-specific provisioning requirements. Every item staged to departure specifications.
Assemble
Meals, trays, and service carts assembled in temperature-controlled environments to exact galley configuration. Compliance documented before transport.
Deliver
Assembled carts transported to the aircraft. Timing synchronized with departure schedules through our proprietary logistics platform.
Load
Ramp operations team loads provisions aboard the aircraft under documented safety protocols and collision avoidance procedures where deployed.
One Platform Running Every Departure
Every service Air Fayre delivers runs on the same technology platform and benefits from the same automation investment.
Scorpio MRP & Logistics
Our proprietary operational manufacturing platform, integrated with Microsoft Business Central, manages flight-by-flight provisioning and operational scheduling across all four locations. Scorpio receives airline flight data and translates it into departure-specific provisioning requirements. The result is provisioning accuracy at the flight level, documented compliance at every stage of the chill-chain, and operational visibility for airline partners and Air Fayre leadership.
Automation Program
A multi-year automation investment is deploying across our network. Assembly robots (beverage build, silverware roll-up, and tray setup) will deploy in the Gardena facility in 2027. A fleet of CAS-equipped catering trucks is scheduled for deployment at LAX in Q4 2026, bringing collision avoidance to ramp approach operations.
Business Central Integration
Scorpio connects to Microsoft Business Central for financial and operational management, giving leadership real-time performance visibility across all four locations. The combined platform supports audit-ready documentation and transparent reporting across all four locations.
