Los Angeles, CA
Air Fayre expanded to a purpose built, 101,000 sq. ft. facility in 2018. We serve LAX and other Southern California airports from San Diego to Burbank. Customers include the largest domestic and cargo airlines. We also service charters for major league baseball and football teams, and large university sports teams.
We service the world's largest air cargo company at 300+ flights per day. Reliable, on-time service of satisfying food and beverage is critical for its large crew and ‘jump seat' passengers.
Air Fayre assembles and caters flights under a ‘total chill chain’. Here are the processes for provisioning a flight accurately and on time.
Produce food - Specialty partners produce food
Local specialty food suppliers produce and plate food for delivery to our facility. We manage the provider to ensure adherence to food safety and specifications. Proprietary catering supply chain software provides the supplier material and production demand requirements.
Assemble - Pack carts with food, beverages, and other board items
We have an end to end chill-chain in which we assemble the meals and pack the service trolleys. Drawers and trays are packed and loaded into carts. The carts for each flight are staged to load onto trucks.
Deliver - Approach the aircraft and load galleys
Load the carts into chilled high-lift trucks for transport to the airfield. At the ramp, we provision the aircraft galley with carts and freehold goods. Our Dispatch ‘control tower’ manages the busy and variable movements at the gates.
Clean - Strip inbound aircraft, wash equipment and dispose of trash
Remove carts from arriving aircraft for sanitization. Refuse is sorted for recycling and international trash is handled per regulations. Crockery and cutlery are washed and sterilized, as are carts.
Replenish - Order and manage supplies of food and other boarded items
Proprietary software extracts demand data from airline system or calculates it based on usage. Items include fresh food, airline owned product, bonded goods, and all other items boarded. Because the system is designed specifically for airlines, we ensure availability while minimizing overstock.
